Bedai – A Spicy Breakfast Classic from Bhind, Madhya Pradesh
Bedai is a beloved dish in Bhind and northern Madhya Pradesh, especially in the Chambal region. This deep-fried, crispy stuffed puri is typically enjoyed as a breakfast or festive snack, often served with spicy aloo sabzi or chutney.
Similar to kachori, Bedai consists of a wheat flour dough stuffed with spiced urad dal paste, rolled into discs, and deep-fried until golden-brown. The outer layer is crisp, while the inside is flavorful and slightly soft.
